- 3 Whole Wheat Bread Slices - 1 Ripe Avocado - 100g. Cooked Broad Beans - 10g. Green Sprouts - 1 Chopped Spring Onion - 30g. Crumbled Feta Cheese - 1 Lemon Cut in Half - Dash of Olive Oil Sprinkle of Sea Salt

Preparation

1. Toast the bread slices to your liking. 2. Open the avocado, remove the pulp, mash with a fork. 3. Squeeze lemon juice over the avocado, season with salt. 4. Spread the avocado mash over the toast. 5. Sprinkle the broad beans, sprouts and chopped spring onion. 6. Season with salt. 7. Add crumbled feta cheese. 8. Finish off with olive oil.
